Yukon Gold, developed at the University of Guelph in Ontario and released in 1980, was the first Canadian-bred potato to gain international popularity. It has golden flesh, buttery flavor, and excellent all-purpose qualities.

Plant seed potatoes (not grocery store potatoes — they carry disease and are treated with sprout inhibitors) in early-to-mid April on Bainbridge. Cut seed potatoes into pieces with 1-2 eyes each, let cut surfaces dry for 24 hours. Plant 4-6" deep, 12" apart (4 per sq ft in a raised bed). As plants grow, hill soil or straw around stems when plants reach 6-8" — this is where new tubers form. Repeat hilling 2-3 times. Water deeply but infrequently. Harvest "new potatoes" 2-3 weeks after flowering by gently digging around plants. Harvest main crop when tops die back (August-September). Cure in dark, cool place for 2 weeks.
