Variety History

Common horseradish (Armoracia rusticana) has been cultivated since antiquity — it appears in Greek and Roman texts. It was brought to North America by European settlers and has naturalized across the continent.

Regional Context

Horseradish is bulletproof in the PNW — it thrives in our climate. One plant provides plenty for a family. It is a perennial, so pick its spot carefully. The root doubles as a companion plant — it repels some pests. Processing fresh horseradish is an experience: grate with vinegar to stabilize heat, or it loses pungency within minutes.

Growing Technique

Plant root cuttings (not seed) in early spring. Plant 2-3" deep at a 45° angle, 18" apart. Horseradish is a perennial that spreads aggressively — plant in a contained area or a buried pot with the bottom removed. It thrives in rich, moist soil in full sun to partial shade. Water during dry spells. Harvest roots in fall after frost (October-November) by digging around the plant and breaking off side roots — leave the main root to regrow next year. Or harvest the whole plant and replant a piece of root. Fresh horseradish is vastly more pungent than store-bought.

Watch For

  • Horseradish is nearly indestructible — the main risk is it taking over. Plant it where you want it forever; every fragment of root left in soil will grow a new plant. In the PNW it can become invasive if not contained. Harvest in fall for best flavor — summer-dug roots lack pungency. Processing releases the heat — grate outdoors or near an open window; the fumes are intense.
